Trim off excess fat and chill meat, firmly strike with flat surface against the meat; work thicker areas more and thinner areas less; work both sides. Chilled meats work best; always work on cutting boards to protect countertops; cover meat with plastic wrap to prevent it from sticking to the Pounder.
